Nicolette Niman, author and environmental lawyer, and her husband Bill run a ranch in North California using high welfare and ecologically sound agricultural methods. A vegetarian for over three decades, Nicolette now believes that eating meat from cattle raised on pasture and from pigs raised outdoors is beneficial for our health, nourishes soils, and fertilises herbal leys. To explain how eating no meat at all is the wrong solution to the evils of factory farming, in 2021 she published her rebuttal, @DefendingBeef. For many years she and Bill ran @NimanRanch which now markets high welfare meat produced by a network of 600 farms that all follow the exacting standards that allow the meat to be sold across the US with the Niman Ranch label.
